Healthy No-Bake Granola Bites

Healthy, no-bake granola bites are a fantastic healthy snack for your children. Whether you are on the go and need a snack, or are simply looking for a fast, easy idea for something you can make for your kids, this recipe is the perfect solution.
They take minutes to make, and you can freeze them and have them on hand whenever the need for a quick nutritious snack arises.
Ingredients
2 cups quick-cooking oats
1 cup ground flaxseed
1 cup crispy rice cereal
1 cup creamy peanut butter
1 cup mini chocolate chips
2/3 cup locally sourced honey
2 teaspoons vanilla extract
2 Tablespoons coconut oil
Preparation Instructions
- Combine all the ingredients together in a large bowl and mix until ingredients are well mixed.
- Using a cookie scoop make rounded balls about the size of a tablespoon and place onto a parchment-lined cooking sheet.
- Refrigerate for 1-2 hours and your snacks are ready!
Storage Tips
Refrigerate in an air-tight container for up to a week, or if you want to keep them longer, you can freeze them for up to several months.
Preparation Tips
You could use whole grain oats, but pulse them in a food processor a few times first. If not you may need to add a little extra peanut butter or honey to the mixture to help them stick together.
